The answer is, and only, GrapheneOS if you want Android, or an up to date, supported iPhone with Lockdown Mode enabled.

LineageOS, while it has excellent broad support for devices, can be run without Google services for privacy, and is an awesome project that has been around for decades, it is not specifically built with security as the top priority.

Is there a wiki or something showing which models of phone support graphene?

It depends on your threat model. Lineage is a good alternative to Graphene and is available on more phones, there’s also Calyx and I’m sure there’s more I’m unaware of.

Also depends on your phone. I use Axion for older phones and LineageOS for newer ones.

There is also e/OS (whoever named e/OS needs a slap, it's a terrible name to search/google for answers, seriously, why? Let's pick a vowel and a very common abbr and join them with a symbol used in URL and file system paths, and expect search engines to even know what you're harping on about. Come on!)
